Almost everything written about stone care online is either an advertisement for a sealer or a piece of American advice that has never met a Kerala monsoon. Both leave out the two things that actually matter: what your particular stone is made of, and what your particular kitchen throws at it.
This is the maintenance briefing we give every client at handover, written down. It covers marble and granite countertops, islands, vanity tops and stone tables — how they behave, when they need sealing, and how to get turmeric, coconut oil and hard-water rings back off them.
The two families, and why the difference decides everything
Every natural stone we fabricate falls into one of two mineral families, and that single fact predicts almost all of its behaviour.
Carbonate stones dissolve in acid. Not dramatically — you will not see it happen — but a splash of lime juice left on polished Carrara for twenty minutes will take a microscopic layer off the surface and leave a duller patch behind. Silicate stones simply do not care. You can leave tamarind on Black Galaxy overnight and wipe it off to nothing.
Two things worth knowing that most guides get wrong:
Marble is not especially porous. A good Italian marble absorbs about as little water as a granite. Its problem is chemistry, not porosity. People seal marble expecting it to stop etching, then feel cheated when it doesn’t.
Half the “quartzite” on the market is not quartzite. Some soft, veined slabs sold as quartzite are dolomitic marble, and they etch. If a slab is being sold to you as quartzite, ask for the acid test — a drop of dilute acid on an offcut fizzes on carbonate and does nothing on true quartzite. We test the ones we are not certain about before they go into a kitchen.
Etching and staining are different problems
This is the single most useful distinction in stone care, and confusing the two is why people buy the wrong product.
- A stain is something added. A liquid has soaked into the stone and darkened it. Oil, turmeric, coffee, wine, rust. The mark is usually darker than the surrounding stone and has a soft edge. It can be drawn back out.
- An etch is something removed. Acid has dissolved the polished surface. The mark is duller and often slightly lighter than the stone around it, with a sharper edge, and it catches the light differently when you crouch down. Nothing has entered the stone, so nothing can be drawn out.
Sealers prevent stains. They do not prevent etching. Anyone who tells you otherwise is selling something.
Sealing: what it actually does
An impregnating sealer is a silane, siloxane or fluoropolymer carried in a solvent. It soaks a few millimetres into the stone, the solvent evaporates, and what stays behind coats the internal pore walls so liquid beads and sits rather than wicking in. It buys you time — often hours instead of seconds — to wipe a spill before it becomes a stain.
It does not make stone waterproof, it does not stop acid, and it wears out.
Avoid topical sealers and waxes entirely. They sit on the stone, look plasticky under Kerala light, wear unevenly in traffic, and eventually have to be stripped.
The water test
Forget the calendar. Put a tablespoon of water on the stone, in the busiest area, and watch it.
- Still beading after 30 minutes — the seal is fine.
- Stone darkens under the puddle in 10 to 30 minutes — plan a reseal.
- Darkens within 5 minutes — reseal now.
The dark patch is only water and will disappear as it dries.
How to seal, in about an hour
- Clean the surface with a pH-neutral cleaner and let it dry completely. Six hours is not too long in monsoon weather — sealing over trapped moisture is the most common way people ruin a seal.
- Flood a small section with sealer using a cloth or a low-pressure sprayer. Work in metre-square patches.
- Let it dwell for the time on the tin, usually 10 to 15 minutes. Keep the area wet with sealer for the whole dwell; top it up if it dries out.
- Buff every trace off with a dry cloth before it dries. Sealer left on the surface cures into a hazy film that has to be dissolved off with solvent. This is the step people skip.
- Wait 24 hours before the surface gets wet or oily again.
How often, in this climate
Kerala is harder on sealers than the tin allows for — 80%-plus humidity year round, salt air anywhere near the coast or the backwaters, and a monsoon that keeps everything damp for months.
The five-minute daily routine
Warm water. A few drops of pH-neutral dish soap. A soft microfibre cloth. Dry it afterwards.
That is the whole routine, and it is enough for 95% of countertops. The two habits that matter more than any product are wiping spills when they happen rather than at the end of the day, and not leaving standing water to evaporate — that is what leaves the chalky hard-water rings so common in Ernakulam and along the coast.
Never put these on natural stone
- Vinegar, lemon, lime — acid. Instant etching on marble.
- Bleach and ammonia — strips sealer, and dulls polished surfaces over time.
- Generic acidic bathroom and tile cleaners — the harshest thing most people own. Keep them away from stone entirely.
- Scouring pads, steel wool, scouring powder — micro-scratches that read as a dull path across the counter within a year.
- Oil soaps and “shine” sprays — build a film that traps dirt.

Match the treatment to the chemistry of what spilled.
The poultice method
A poultice is an absorbent paste that reverses the flow — as it dries, it pulls the stain up out of the stone.
Mix your absorbent (baking soda, or white kaolin powder) with the chemical for that stain into a paste about the consistency of thick curd. Spread it 5 mm thick over the mark and about 20 mm past its edge. Cover with cling film, tape the edges down, and prick a few holes so it dries slowly. Leave it 24 to 48 hours, then scrape it off with a plastic — not metal — edge and rinse.
Two or three rounds on a deep coconut-oil or turmeric stain is completely normal. Each one lifts a fraction. Patience beats pressure here.
Repairing etch marks
Since nothing has entered the stone, the fix is mechanical.
- Light etching on polished marble — marble polishing powder (a tin oxide compound) with a damp cloth and firm circular pressure, five minutes. Most kitchen etching comes back to full gloss this way.
- Heavy or widespread etching — the surface has to be re-honed and re-polished with progressively finer diamond pads. We do this on site; a kitchen run takes a day.
- Etching on honed marble — often invisible, which is the single best argument for specifying honed marble in a kitchen in the first place.
Heat, chips and cracks
Granite does not scorch, but thermal shock is real. Sudden concentrated heat finds the weakest point in a piece, which is usually a seam, the narrow bridge of stone in front of an undermount sink, or the resin in a treated exotic slab. Use trivets. Do not stand a pressure cooker straight off the flame on a seam.
Chips along an edge are repaired with colour-matched epoxy, cured and polished flush — invisible at arm’s length. Cracks are stabilised with resin and, where they cross a stress point, reinforced from underneath with a steel rod set into a routed channel. Replacement is genuinely rare.
If you chip a piece, keep the fragment. Refitting the original chip beats any fill.
Tables need more care than countertops, not less
People maintain their kitchen and neglect their dining table, which is backwards. A stone table sees standing condensation under cold glasses, citrus and wine, hot serving dishes placed without thinking, and — the one nobody plans for — hours of direct sunlight through a window.
- Coasters and trivets, always. A wet glass ring on unsealed marble becomes a permanent mineral halo.
- Watch the sunlight. Resin-treated and resin-backed slabs, including most onyx and many exotic granites, can shift in tone over years of direct sun. Move the table, or accept the patina as part of it.
- Felt-pad anything that sits on it permanently. Ceramic and metal bases grind a matte ring into polished stone.
- Mitred and waterfall joints are glue lines. They are strong, but do not let water pool along them, and never attack them with solvent.
- Under the top matters too. A stone table needs a base that carries the load evenly and does not point-load the slab — a 2.4 m × 1.1 m top in 30 mm granite is about 215 kg.
For a table that will actually be eaten at every day, we usually steer clients to honed granite or a true quartzite over polished marble. Marble remains the more beautiful top; it is simply the one that records its history.
Finish changes the maintenance more than the stone does
- Polished — least absorbent, deepest colour, but shows every etch, fingerprint and water mark. Best on dark granite and on formal surfaces that are not worked hard.
- Honed — flat matte sheen. Slightly more absorbent, so seal it properly, but it hides etching and scratches so well that it is our default recommendation for marble anywhere near food.
- Leathered or brushed — textured, low-sheen, and outstanding at hiding fingerprints and water spots on dark granite. The lowest-maintenance surface we sell.
- Flamed — coarse and grippy, for outdoor counters and wet areas. Seal it; it drinks more than the others.
A Kerala year
What twenty years looks like
Properly specified and reasonably cared for, a granite countertop in Kerala will outlast the kitchen around it. We have refitted kitchens where the cabinets, appliances and tiles were all replaced and the granite was cleaned up and put back.
Marble is a different agreement. It will not stay as it left the workshop. It will collect a soft matte patina of small etches — the French call it marmoréen and pay extra for it. If that sounds like damage to you, buy granite or quartzite. If it sounds like a surface that keeps a record of twenty years of family meals, buy the marble and stop worrying about it. Both are correct answers; only one of them can be un-chosen later.
Specifying a piece that is easy to live with
Most maintenance problems are decided before anything is fabricated — in the stone, the finish and the detailing.
- Choose the finish for how the piece will be used, not just how it photographs.
- Ask for a drip groove on the underside of an overhang so water leaves the stone instead of running back into the cabinets.
- Specify epoxy grout and epoxy bedding, not cementitious, anywhere near water in this climate.
- Put the joint where it reads least — at a sink or a corner — and have it vein-matched.
- Have the piece sealed before it is delivered, not after it is installed and already dusty.
